Slow Wines for an experience of flavours
“Nobody can do things fast and well” – a wise, old Portuguese saying. So fast is the enemy of good.
Slow food and slow wine are magical phrases from my taste in living.
Slow wine is similar to slow food but a little more complex: It also takes time to make, but it needs more time to give a harmonious taste and even more time to show off its quality to the full.
What I want is to make pure slow wines, those that your drink five or six years after harvesting and that you admire in the decades to come. Apart from slow wines, my wines (of minimalist oenology), must always privilege the character of perfection, because soulless perfection or perfection without character makes wine, like people, tiring.
White wines

Equinócio
White wine from the century-old Reguengo grapevines. Crushing in the press, decanting and fermenting in barrels or small oak casks. Maturing for one year on fine lees. Bottling without fining or filtering. Maturing in the bottle for 6 to 12 months.

Quartzo
White wine from cement vats, natural fermentation and aging on lees. The smokiest and most mineral of our whites. Exoticism in the form of wine.

Vira Cabeças
Natural fermentation and aging for almost two years with lees in old barrels. The most unctuous, fattest, and most amiable of our whites.

Respiro Seda
"Seda" from silky and delicate, a fresh and elegant white wine. Fermentation and aging with lees for 10 months in old barrels.

Respiro Natural
White wine without sulphites, with the addition of dried chestnut flowers, giving it exoticism and provocation. Vineyards from Vale do Reguengo, with an altitude of 560 meters. Aging of 9 months with lees.

Respiro Altitude
White wine with notes of fruits and flowers. It is the only wine that ferments at low temperature. It ages for 9 months with lees, in old barrels.

Respiro Cimento
White wine which it´s fermentation and aging is 100% in cement deposit. The traditional white wine, with an “open pipe”, to which we aged with lees for 9 months. It is an "old-fashioned" portuguese white wine, that it´s soft and smooth.

Respiro Lagar
Manteúdo and Diagalves varieties. Grape crushed by foot in lagar. Natural fermentation with skin and stem. This wine ages for 9 months with lees, in old barrels.

Respiro Brut Nature
100% Chardonnay Brut Nature. Wine from bought grapes, these can come from various places. The sparkling wine is Beirão, made with the Chardonnay variety. Red and white are produced with the same oenology as the other brands. This sparkling wine is described as classy and superior.

Organic red from the vineyards surronding our hotel. Fermentation in lagar, ages for 20 months in used barrels. Struscture and elegance, describe this astounding wine.
